Dino's Stew
So you asked for him to share, and here it is!
The key is to start with Snake River Farms
brisket! It is the best, and has beyond incredible flavor. Anything Snake River Farms
is just out of this world.
We freeze the extra for the stew, beef stroganoff, chili, etc. If you don't have that, you're going to end up with just an OK stew – I'm kidding!
It's super important to start to build the flavors.
Ingredients: 1 onion 2 packages of mushrooms 1/4 stick of butter salt (as needed) garlic powder (as needed) 3-4 carrots (chopped) 6 celery stalks (chopped) 1 qt chicken or beef stock 1-2 lbs stew meat of choice - we use brisket 1 lb chopped potato Dash of red wine
Directions: 1. Sauté onion and mushrooms, along with butter, salt, and garlic powder. The smell here is already great, but you just wait! 2. From here, you want to sauté it until it's nearly charred and starts to stick to the bottom of the pan a little. 3. Then, add a little red wine to deglaze the pan and continue building the flavor. 4. After your mushroom batch has cooked until charred, add carrots, celery, chicken stock, brisket, and potatoes.
5. Once it's all in, let it simmer for 3-4 hours and TRY not to gobble it all up. It makes the house smell I N C R E D I B L E.
We eat it on it's own but you could totally pair it with a crusty bread or a salad. It would be perfect for a big group because you will be the hero that makes everyone feel all warm and joyful! And rainy days? Forget about it! It's heaven.
