It's actually a little bit on the cooler side here in Florida – well as cool as it will probably get but it makes us all want to cuddle up and eat, lol. And cozy weather means its soup season! We love making soups for dinner this time of year because of how easy they are and this one is as easy as it comes! Plus, when it comes to cooking them, soups are very forgivable, since you can kind of add and take away things as needed or as you have things. This green soup Dino created is one of our favorites to make...Don't be scared by the color, I promise it's delicious! Ingredients:4 bags of frozen peas3 cartons chicken stock 2 yellow onions diced2 heaping tbsp of jarred garlic 1 stick kerigold butter palm full of mintpalm full of fresh parsley salt + pepper to taste (we added a lot)2 tbsp holy cow by Meat Church seasoning For the top:8oz crème fraîche8oz heavy cream Instructions:
In a large cost iron pot, add the butter and minced onions until they’re very brown and starting to build a char.
Then add the garlic. Let that go for 3 to 5 minutes.
Add half the stock and all the peas until peas are tender.
Add the remaining stock and the rest of the herbs.
Add all of it to a blender in batches and blend.
Put it all back in the pot and bring to a light simmer.
So comforting and adds a bit of health in an ordinarily not so healthy time of year! xx, Ash
