This easy homemade Coconut Granola is great with yogurt or by the handful! Ingredients: 2 cups old fashioned oats¾ cup shredded unsweetened coconut, finely chopped½ cup finely chopped almonds2 tablespoons brown sugar1 teaspoon cinnamon¼ teaspoon salt 4 tablespoons coconut oil, melted½ cup pure maple syrup1 teaspoon vanilla extract
Directions:
Preheat your oven to 300 degrees fahrenheit. Line a large baking sheet with parchment paper or a silicone slip mat. I use a throw away pan just for convenience purposes, it can get sticky and they are super easy to find at Target!
In a large bowl, combine oats, coconut, almonds, brown sugar cinnamon and salt. In a small bowl, whisk together coconut oil, maple syrup and vanilla extract. Pour liquid mixture over dry ingredients. Stir until dry ingredients are well - coated.
Pour the granola mixture onto prepared baking sheet. Spread granola into an even layer. Bake for 30 minutes or until granola is golden - brown, stirring every 10 minutes. Let granola cool completely. Store in airtight container for up to 1 month!
