I grew up making these cookies with my Mom. It was my favorite Valentine’s Day tradition and I have continued the tradition with our kids.
When all of us are in the kitchen baking and cooking and spending time together, I am in my happy place. There is no greater time than the time spent with my Valentines!
These raspberry pecan cookies are perfectly nutty and sweet, and completely addictive. And they are so simple to make!
Ingredients:
1 cup soft butter
⅔ cup sugar
½ tsp vanilla
1 ⅓ cup ground pecans
2 cups flour
Directions:
Cream your butter and sugar in a stand mixer or with a hand mixer
Add in your vanilla and slowly combine your pecans [we use a blender or food processor to your pecans nice and ground up]
Mix in flour [smells sooo perfectly nutty at this point!]
I recommend chilling your dough for an hour or so to make sure that butter hardens a bit - it will make it easier to roll out
From here, you Roll out your dough and cut into hearts using a cookie cutter6
Place your cookies on a parchment lined baking sheet and bake at 375 degrees for 7 to 10 minutes
Cool completely. Once your cookies are cooled, spread jelly on one cookie and top with another cookie.
Dust with powdered sugar on top and try to eat just one. I dare ya!
