Take me to all the places, give me all the food.
I just want to sit at every cafe with cute tables and bistro chairs, sipping on coffee and indulging in a sample platter of all of their pastries. If ever a friend invites me to coffee, I will pretty much drop my life and join them! Can you tell I have a bit of a sweet tooth? My baking skills aren’t chef worthy by any means. Most of the recipes I try, end up looking like Pinterest fails. Which is crazy to me because I follow the recipe exactly. So either Im the worst cook, or those fools are lying!
There are a few things I CAN make, one in particular goes along perfectly with my treater vibe. (treater:my lingo for something sweet, something special). Not only is it yummy, its healthy as well! Double thumbs up.
(These pancakes are actually my recipe, but ‘Nana’ made them for the kids while she was here one time, and now they are hers…kids.)
All of these ingredients can be found at Trader Joes. This will make about 12-15 pancakes. They are thin, so you may want to double your recipe.
Blend together: 1 cup rolled oats. 1 cup cottage cheese. 6 egg whites (I get the ready egg whites). 1 banana. 1 teaspoon vanilla. 1 teaspoon cinnamon.
Spray your pan with some coconut oil spray, and flip those flap jacks until done. Top them off with peanut butter and a drizzle of maple syrup. They are light and tasty and you’ll most likely never make a regular pancake again.
